Behind this exceptional flavor is the legacy of the Canales family, one of Nicaragua’s most respected coffee producers. Since their first Cup of Excellence win in 2004 for a fully organic coffee, the Canales family has continued to raise the bar for quality. Their farm, Los Delirios, was first purchased in 1958 by Don Pio Canales and has since grown to nearly 400 acres, including Fincas Borbollon and San Antonio.

Today, Don Pio’s grandsons—Norman, Milton, and Daniel—carry forward his vision, operating Los Delirios as a 100% organic farm. From producing their own natural fertilizers using cattle manure and coffee pulp, to carefully drying beans on raised, shaded beds, every step is done with sustainability and excellence in mind. This dedication results in a coffee that not only tastes remarkable, but also reflects decades of tradition and innovation.
